Lemon Coconut Mexican Cookies

Growing up my mom would take my siblings and I to the panadería. That big round cookie with a bunch of sprinkles on it was always one of our favorites. I mean a cookie with colorful sprinkles on it is a kids sugary dream come true. I came across this recipe on Instagram and had to try it! It is the upgraded version of that cookie I grew up eating. The lemony coconut flavor makes it more "adult" like but don't get me wrong I still added all the sprinkles on top!
