Have you ever had those tres leches cakes from the Mexican bakery? They are either a small 8 inch round cake decorated with fruit or the big rectangle cakes. Maybe you got lucky and they sold it by the slice. Okay I am getting way off topic here. Anyways, this homemade tres leches cake I made this past weekend I dare to say is better than any of the cakes I have ever had from the Mexican bakery. There is something about having a homemade cake that makes it all the much better. I had a flaw or two but hey, there is always room for improvement in the baking world.
I always like to try out new recipes and try and better my skills in baking. I have made a tres leches cake before in the past but I was like 13 and it did not taste very good even though my Dad lied to me and said it was because it was for his birthday.. lol. I had a moment of redemption with this tres leched cake because it was DELICIOUS. My favorite part was the whipped topping. It is not necessarily frosting because its just a thicker version of whipped cream that many Mexican cakes have instead of the traditional frosting you see in many cake here in the US. Im guilty of licking the spoon once or twice from what was left over. Sorry not sorry. The middle of my cake was very moist as a tres leches cake should be but some of the edges of the cake were still slightly dry. **Sigh** I think this had to do with the dish I used as I poured the milks on top of the cake. Next time I need to use a large enough deep dish, which I did not have but will invest in for the next time I make this cake!
Here are some photos of a couple fo the ingredients and the final product. Of course I decorated the cake with fruit, it wouldn't be complete without the typical fruit decorating.
I did not take pictures of the whole process as this whole thing was kinda done just at the spur of the moment and I got to excited. Maybe if there's enough interest I will post the recipe I used.. maybe..
